Super Green Juice

Ok, so let’s be real.

It’s February. Valentine’s Day happened, and you’re still munching on that box of chocolates, because – whether you gifted yourself, or received them from someone else – calories given with love don’t count, right?

And we’re really past the point where we can say we’re all still on our New Years resolutions (but kudos to those of you staying strong and still with it!) so maybe it’s time to consider something different.

I’ve always said that I will sneak spinach into my children’s smoothies if/when I have them. What’s that? You don’t want to eat the spinach salad mommy just spent 30 minutes making? Well, let me go fix you a smoothie! *Cackles wickedly*

Or at least that’s how I imagine it will go. Future offspring aside, if you’re looking for a healthy snack, this takes the (rice) cake. Green tea, spinach, yogurt for protein, all disguised with fruit.

I don’t have a juicer, so I can’t really call it a juice I suppose. But neither is it a true smoothie. The consistency is much more juice-like, so since I am the one controlling the keyboard (at least for now…I’m looking at you fictitious future children) we will go with juice.

Either way, this is a great snack, and the B vitamins from the spinach and little boost of caffeine from the green tea can help you power through that afternoon yawn fest.

Ingredients:

  • 1 cup green tea, brewed and cooled to room temp
  • 1 green apple, sliced
  • 1 banana, sliced
  • 2 cups spinach, washed
  • 1 cup greek yogurt

Directions:

1. Toss the green tea, apple, and banana into a blender and liquify.

2. Add the spinach and yogurt in batches, continuing to blend until everything is nice and liquid.
