Tater Tot Hot Dish Cake

I think I finally lost my marbles.

I gave up potatoes and cheese for Lent, and then decide the theme for my friends’ monthly family dinner should be hot dishes.

For anyone familiar with hot dishes, that pretty much eliminates anything I could possibly eat that night.

What was my solution? (And this is where you can see I really lost it.)

I made tater tot hot dish out of cake. Continue reading

Two Smart Cookies Taste Test and Review

I have this terrible habit of window shopping the Flirt lingerie boutique on the corner of Snelling and Selby whenever I am stuck at that light. Which happens more often than you might think.

The light turns green, and I do not notice, because I am scoping out the gorgeous bras, slips, etc. currently on display in the window. And it changes every week, so really, I am not solely to blame here.

DSC02270

But this review is not about underpants. It is about cookies. Two Smart Cookies to be precise. And don’t let my terrible photography (I was in a hurry to get to a ladies-only Vampire Diaries marathon night) sway your decision. These cookies are worth checking out. Continue reading

Super Green Juice

Ok, so let’s be real.

It’s February. Valentine’s Day happened, and you’re still munching on that box of chocolates, because – whether you gifted yourself, or received them from someone else – calories given with love don’t count, right?

DSC02118

And we’re really past the point where we can say we’re all still on our New Years resolutions (but kudos to those of you staying strong and still with it!) so maybe it’s time to consider something different.

I’ve always said that I will sneak spinach into my children’s smoothies if/when I have them. What’s that? You don’t want to eat the spinach salad mommy just spent 30 minutes making? Well, let me go fix you a smoothie! *Cackles wickedly* Continue reading

Chocolate Chip Cookie Dough Dip

This is not one of those healthy white bean cookie dough dips.

DSC02176

Maybe I will make one of those one day. But not today.

DSC02178

Today, I sit with my spoon, and I try very hard to remind myself that I made this dip for a Super Bowl party. Not for my dinner tonight. Continue reading

Oreo Cheesecake Bars

So I have this coworker. Her office is next to mine, which is across the hall from the staff kitchen.

Which is where I stash my treats when I bake something for the office.

For either of us to get anywhere in the building, we have to walk by the corner of the counter where I put the treats I made, and am depending on my coworkers to eat up so I don’t gain 300 pounds. A day.

DSC02086

Since I am giving away the treats, it’s easy enough for me to deny grabbing one or two, or 10, throughout the course of the day. And chances are good that I spent the previous evening sampling one or two, or 10, for quality control purposes.

I mean, I work with these people Monday-Friday. I can’t get a reputation for brining in substandard goodies, now can I?

So while, for me, the proximity to the kitchen, and my treats, is no big deal, I’ve slowly come to realize something about my coworker.

I’ve become her food drug dealer. Continue reading

Blueberry, Basil, and Goat Cheese Tarts

When I made these tarts, it was 2 degrees outside. Not 2 degrees Celsius, which would be 35 degrees Fahrenheit, but 2 degrees Fahrenheit, or -16 degrees Celsius.

DSC02004

So, really freakin cold. No matter what country you’re in.

I seem to take cold weather, and snow in particular, as a personal challenge to see how much food I can make in one day. Continue reading

Quinoa Bites with Southwestern Spiced Dip

The Super Bowl is almost upon us.

I have to be honest, I’ve never had a vested interest in who wins. Ever. Going to live games is fantastic, I love that. Especially when you get caught up in a 20 minute wave.

DSC01935

But when it comes to watching games on TV, it’s just not my thing. For me, football season is exciting for another reason.

The parties. Continue reading

Pumpkin Fettuccine Alfredo

Happy New Year, everyone! Wait….what? I’m 9 days too late?

Yeah. I has been a while since I last posted, hasn’t it? Unfortunately, I’ve been holed up with the stomach flu since Friday night.

Trust me, the last thing you want to do when you have the stomach flu is update your food blog. Bleh.

Thankfully, I’m now fully recovered and eager to share some recipes I’ve been stockpiling over the past few days. My illness actually came at a really appropriate time. Heading into 2013, I had decided my theme for the year is “Transformation” part of this including living a more healthy lifestyle. And now that I’ve spent the first week of 2013 in sickness, I am better ready to appreciate the health. Continue reading
